RE: Essential Tools for the Kitchen

I had a similar list made sometime ago, but cannot find it (still on vacation). But let's join in and create a useful list for most, including for those who starting out with a new home.

          * KNIVES: highly reccommend the Henkel 4-star brand for durability, reasonable price and sharpness.

          a) a Chef knife of 9 inch long
          b) a pairing knife
          c) a LONG serrated knife of any brand (for frozen meat, for fish, can cut through bones)
          d) a long sharpening block (Aluminum oxide, made in China for cheap); highly reccommend you to use mineral oil for the sharpening stone, not water. Mineral oil can be bought at drugs store or hardware store)

          * KITCHEN SHEARS: Chefmate brand, made in China, $3 each is a strange thing (Henkel's costs $40) but it works well to cut chicken into pieces without chopping; cleaning fish, shrimps.

          * STAND MIXER: Kitchen Aid brand any size is OK for regular home use (making cakes, mashing boiled potatoes, making dough for bread, with a $50 attachment grind your choice of meat and stuffing sausages etc.)

          * FOOD PROCESSOR: Cuisinart brand is good, 11 cup capacity is more useful for a normal home use (making meat/fish paste for nem, cha?, pizza dough etc.)

          * BLENDER: any brand is OK as long as it can crush ice for making smoothies & fruit drinks. Good unit must be able to tear the bowl apart for better cleaning (don't cut your fingers with the blade)

          * STAINLESS STEEL BOWLS: a set of stainless steel bowls of medium to large (quart size to 2 gallons), at least 4 - 6 is a very handy thing to have in the kitchen for food preparation. Currently, some made in India is very cheap but you must choose those without blemish, hole, rust!

          * CORNING GLASS CONTAINERS & CUPS: for food preparation as well as for storing hot food.

          * COLANDER: large, made of stainless steel seems to be best.

          * CHOPPING/SLICING BLOCKS: need two each; if you can find a thin one (foldable) then get one. These should be washed in a dishwasher or at least with soap, then bleach frequently.

          * Kitchen Twine: heavy gauge, cotton.

          * STEAMER: either aluminum or bamboo; 2 - 4 stacks high, with lid; if with bamboo, they can be stacked on top of a large wok.

          (for steaming fish, vegetable, dimsum)

          * BUTANE BURNERS: 2 each, can be used on table top for hot pot, shabu-shabu, bò nướng vĩ etc.

          * SPICE GRINDER: buy a strong wall electric coffee grinder and dedicate it for the grinding of spices such as peppers, coriander
seeds etc. DON'T buy the preground spices, especially black pepper.
etc. PLEASE DO ADD TO THE LIST

Keys: Look for SALE; compare cost; choose well; don't rush out and buy everything, all at once, if you want to save money.

Hello YeuFood - I hope you are feeling much better now. :hugs: :hugs:

            Jane Smith:

Looking great. Thank you so much for being specific.

Chefmate for $3 each! Is it equivalent to Henkel's quality?

What is a chopping block and kitchen twine?

Please all sis if you have any ideas please add to the list. Thank you. Thank you.

It is very helfty; strong and sharp (made in China; but designed in USA) and only $3! No one complains yet.

What is a chopping block and kitchen twine?

A thing you slice foods with.

Kitchen twine for tying meat or herbs together.
