  • Braised Beef Short Ribs

    Last night we had fantastic braised beef short ribs, cooked to my request. The ribs were so tender, tasty and the aroma was so good.

    I ate the ribs with boiled potatoes; and my husband prefered the french bread with his.

    Since I have the priviledge to go to the resort's kitchen ahead of time to discuss with the chef for our meals; if you want to learn any dish -within reason- from the Black Forrest, I can ask for the recipe for you.

      KitchenAid: the way they cook the short ribs is so simple, but devine.

      (he said that if the media asked, he will only tell them the long way to cook it!)

          Black Forrest Braised Beef Short Ribs:

          Ingredients:

          * chubby beef short ribs
          * carrot, celery, yellow onion
          * bay leaves
          * thyme +/- rosemary
          * cayenne pepper +/- Hungarian paprika
          * garlic, black pepper, salt, sugar
          * beef stock (or just water)
          * good red wine, the one you would drink while sobbering

          Preparation:

          KEY: beef ribs rubbed with a mixture of cayenne, thyme, salt, pepper then leave in the refrigerator, uncover overnight (as the restaurant does it, at the time they decide to print the menu & make it as the Special of the day).

          KEY: use pressure cooker to cook; especially for quick serving.

          * brown the ribs, which were lightly floured, with olive oil + butter. Do it all sides.

          * Into the pressure cooker, to size, place the browned ribs + crushed garlic, more herbs of your choice (thyme, rosemary, crushed garlic) heat the pot up,

          * add chopped onion, celery, carrot and bay leave

          * add about 1+ cup of red wine and beef broth to barely cover the ribs (more juice will be made)

          *** the chef said that in the Winter time, he would add some tomatoes (oddily enough, since tomatoes are better in the Summer)

          ** install the pressure cooker's lid, bring to the right temperature and pressure (15lbs or so)

          Cook for 20 - 30 minutes; CAREFULLY release the pressure;

          remove the ribs to a warm plate;

          strain the liquid through a sieve, into a skillet, reduce it to about 1/2;

          OFF HEAT, add a chunk of cold butter, season to taste and pour the sauce over the ribs, serve immediately.
