    Ingredients:

    * beef ribs, the 7 bones fresh or frozen @ $1/lb or less

    * beef tubular bones @ $.39/lb to $.59/lb

    * whole untrimed beef brisket @ $1.10/lb to $1.79/lb (can be $3/lb at certain retail outlets)

    * beef cross rib roast @ $2/lb to $4/lb depending how you buy
    (excellent thịt tái; more flavorful than London Broil cut)

    ** aromatic herbs (secret MAGIC JUICE; ask for more detail)

    ** garnish

      If one thinks that a restaurant which sells phở AND other dishes and it keeps a pot, or two, of phở broth simmering waiting for the order,

      then one may be mistaken; or the restaurants practicing that kind, are bad.

      Most non exclusive (say from 7am to 7pm) phở shops, such as most Vietnamese restaurants which also sell phở, the chef or most likely the owner, creates a MAJIC JUICE which with a little amount of such juice plus the common restaurant broth, one can quickly turn a common broth into the singing phở, Bún Bò etc. with full aroma.

      Now,

      to answer your specific question, one would extract herbs (star anise, false cardamon, cinnamon, coriander seeds +/- whole cloves) into a water + fat solution.

      When the order arrives: 16 oz of broth, 1 - 2 tablespoons of the majic juice + one or two minutes on the burner = phở broth to be added to the assembled bowl where noodles and other toppings are ready.

      Now, tháts commercial phở biz folks!

          Imagine that in your yard, two tables with benches, umblellas & lights,

          Isabella is busy at the boiling broth pot, slicing and dicing the beef, from rare to well done, but not to forget the beef balls (not the natural ones), tendon and whatsnot

          while Isa's hubby is busy to bring the phở bowls to the captured clients.

            Còn lâu ạ Jane! any time my husband eats Phở or noodles, I had to cut them short so he can eat with the spoon. Although he knows how to use chopsticks but he cannot handle both hands when eating phở like us. HAHAHAHAHAHA
