    No Fuzz Kim Chi by JaneSmith
    * Ingredients:

    * daikon roots (+/- carrot, green papaya, turnips etc. one or a mixture of them)

    * fresh garlic

    * mild vinegar (rice vinegar, or Orchids' Sushisu Vinegar)

    * hot sauce (Crystal or the one you eat phở with -SRIRACHA HOT CHILI SAUCE)

    * good fish sauce

    * good sesame oil

    * some sugar

    Preparation:

    * peel then slice the daikon root into medium thin slices;
    do the same with others.

    * air dry them until they feel dried with your fingers (can use a food dehydrator or the sun for this)

    * in a glass jar, for 2lbsof daikon, mix 2 - 3 tablespoons of fish sauce, 2 spoons of sugar, 2 pons of vinegar, 1 spoon of sesame oil, a squirt or two of hot sauce (use pepper flakes if you wish),

    ((the amount of each is up to your desire and taste))

    then pack it in the daikon;

    lid the jar; leave at room temperature for few days;

    use it for anything you can think of.
